Jam Lamb Burger

Holcomb Hollow has had a wonderful couple of weeks working several new farmer’s markets. Thanks to our quality products backed by a commitment to environmental sustainability, we have seamlessly transitioned into serving the Libertyville & Lake Bluff communities as well as our hometown of Mundelein. Besides just being able to sell jam & bread to more people, this growth has allowed Holcomb Hollow to network with numerous other small businesses. One fellow vendor we’re happy to be next to at the Libertyville market is the Staff of Life Farms, a supplier of grass-fed meats, eggs, and other farm-fresh products.

We were more than happy to take some of their ground mutton as well as a bottle of their own pressed sunflower seed oil. Of course, it wouldn’t be a Holcomb Hollow recipe if we didn’t add some jam! About a half jar per pound of ground meat is usually sufficient, as it was for this dish. The thawed meat was mixed by hand with a little over a teaspoon each of ground cloves & ginger with the largest clove of garlic I could find, minced, and a bit of salt. Lastly, half a jar of our own Orange Peach Marmalade, which took a 2nd place ribbon at this year’s Lake County Fair, mixed in well with about a half a cup of bread crumbs.

We pan fried the patties over a low-medium heat in one tablespoon of sunflower seed oil for 5 minutes each side. There were some cherries from the jam poking out in some places, and they cooked nicely. After they rested for a few moments, we served them on buns with our Pineapple Mango Habanero ketchup, which you can find the recipe for on our Jam Suggestions page.
