Baked Apples Stuffed With Cream Cheese & Carrot King Jam

Our Carrot King Jam, inspired by the Carrot King of the Bristol Renaissance Faire, is simply delicious. Flavored with pears, pineapple, and raisins, it faithfully recreates the sensation of eating a carrot cake. Spread over toast, heated up and served over ice cream, or just licked from a spoon, every jar is a treat. For an even livelier dish that blends the line between dessert and delicacy, stuff a fresh apple with Carrot King Jam and a little bit of cream cheese.

Hollowed Filled

Start by cutting the tops from the apples, using a knife in a conical manner, and hollowing out the core & seeds, perhaps with a grapefruit spoon. Try to keep as much of the fruit in tact as possible without leaving any core. Once your chamber is complete, put a dab of cream cheese (or brie, goat’s milk, any creamy white cheese) into the apple and top it with Carrot King. Then you just roll them up in tin foil and grill or bake for 30 minutes at 350 degrees, varying by the size of your apples.
